Tasting Notes
Bursting with dark cherry aromas with underlying tones of forest floor and wet earth. The color in the glass is pale scarlet. On the palate this wine shows plenty of volume, with dark wood, strawberry, cherry and slight toasted oak flavors. The tannins are supple and work well with the crisp acidity to drive the finish.

Winemaker Notes
Picked and sorted in the vineyard, the grapes were destemmed and pressed immediately upon arrival at the winery whilst they were still cool from the morning fog. The clusters are then sorted and 100% destemmed. The must was pumped to open top tanks for 4 days cold soak followed by a reletivly cool fermentation carred out by a yeast strain, Assmanhausen. Punched down twice a day, once fermentation is complete the must is pressed and allowed to complete malolactic fermentation in barrel. The wine is gently filtered before bottling.
